Abstract

Sweetened condensed milk is fresh milk that has been concentrated by evaporating some of the water and then adding sugar as a preservative. Milk can be damaged if there is texture, color, odor, and taste disorder in the condition where the milk is no longer consumed by human beings. Damage caused by microorganisms in foods often involves the degradation of nutrients such as proteins, carbohydrates and fats. If this condition allows these organism to produce mycotoxin substances that can be harmful to health.Calculation of total colon mold on PDA medium done by pour plate 10³- .To determine the best conditions of storage of sweetened condensed milk that has been openend the lid and stored until visible growth of mold to Total Plate Count ( TPC ) of sweetened condensed milk. Colonies that grow on 1 day storage total 200 CFU/ml. And at 2 dy storage there was also a growing colony of PDA mediums 50 CFU/ml. Because at 2 days storage of condensed milk in open state and in incubation for next 2 days. Allowing on the PDA medium. After adjusted with all macroscopic and microscopic characteristics in the 2 types of shrimps identified in this study are Fusarium sp and Rhizopus sp. Keywords : Numbers of molds, types of molds, sweetened condensed milk.
